  2. Wash and dry the beets. Cut them into 1-inch cubes. Put the cubed beets in a bowl, add 2 tablespoons of olive oil, salt, and pepper. Toss well and place the beets on the prepared baking sheet. Cover the sheet pan with aluminum foil and bake for 20 minutes. Then, carefully remove the aluminum foil and bake for 10 minutes. Test how tender the beets are. If they are still too hard, continue to roast in 5-10 minute increments until soft and slightly charred. When ready, place the sheet pan on a cooling rack and allow the beets to cool for 30 minutes.
  3. In a small jar, mix the remaining 1 tablespoon of olive oil, balsamic vinegar, Dijon mustard, water, apple cider vinegar, garlic powder, salt, and pepper. Mix well and add 2 tablespoons of dressing with the crumbled tofu in a small bowl. Mix well and set aside.
  4. When ready to assemble the salad, place the mixed greens in a large salad bowl. Dice the apple and put half of the diced apples and half of the roasted beets on top of the greens and toss well with a portion of the dressing. Garnish the salad with the remainder of the apples, beets, and some of the crumbled tofu. Optionally sprinkle the pumpkin seeds and serve.
  5. Serve with remaining tofu on the side and the dressing on the side to keep the greens fresh and crispy.

Notes

  • Cut the beets evenly: To ensure even roasting, cut all beet pieces to a similar size (about 1-inch cubes). This prevents some pieces from overcooking while others remain raw.
  • Don’t overcrowd the tray: For beautifully charred and caramelized edges on your roasted beets, ensure they are spread in a single layer on the baking sheet. Overcrowding leads to steaming rather than roasting.
  • Be careful what you wear: Beets can stain! Wear an apron and clean cutting boards and tools immediately after use. Gloves can prevent hand staining.
  • Leave the beets to cool: Adding hot beets to fresh greens will cause them to wilt. Allow roasted beets to cool for at least 30 minutes, or roast them a day in advance and chill in the refrigerator.
  • Taste and Adjust: Always taste your dressing and assembled salad before serving to fine-tune the seasoning and achieve your desired balance of flavors.
