Ingredients

  • 2 tablespoons of vegan butter
  • 1 garlic clove minced
  • 1 ½ teaspoon of chopped fresh oregano
  • ½ teaspoon of paprika any paprika will work
  • Salt and pepper to taste
  • 1 16-ounce block of tofu, sliced
  • 2 cups of cherry tomatoes
  • Chopped fresh parsley

Instructions

  • In a medium bowl, combine and mash together the vegan butter, minced garlic, chopped fresh oregano, and paprika. Mix well until a fragrant herb butter is formed. Season with a little salt and freshly ground black pepper to taste. This mixture will be the flavor base for your tofu.
  • Heat a large frying pan or skillet over medium heat. Add approximately half of the prepared vegan butter mixture to the pan and allow it to melt and become fragrant. Carefully place the sliced tofu fillets into the pan, ensuring not to overcrowd it. Sprinkle the tofu with a dash of salt and pepper. Cook for about 5-7 minutes per side, or until the tofu develops a beautiful golden-brown crust and is slightly crispy. Once cooked, remove the tofu from the pan and set it aside, covered, to keep warm while you prepare the sauce.
  • Increase the heat in the same pan to high. Add the cherry tomatoes to the hot pan. Once the tomatoes begin to soften and burst, add the remaining vegan butter mixture to the pan. Continue to cook for another minute or two, stirring constantly, to ensure the butter mixture fully melts and melds with the tomatoes. The sauce should be glossy and slightly thickened.
