  • 1 cube of no-chicken or vegetable bouillon/paste equivalent
  • ¼ teaspoon of sugar
  • 1 teaspoon of paprika
  • 1 teaspoon of cumin
  • ½ teaspoon of garlic powder
  • 1 teaspoon of chili powder
  • ¼ teaspoon of cayenne pepper
  • 1 tablespoon of oil
  • 2 Tablespoons of minced onion
  • 12 to 14 corn tortillas
  • 1 medium onion minced (for topping)
  • 1 bunch of cilantro minced (for topping)

Instructions

  1. Place lentils in a saucepan with vegetable broth and bring to a boil. Cover and simmer for 15 minutes or until the water has evaporated and the lentils are soft. Drain any excess liquid. Place the cooked lentils in a food processor with the oats. Add flour, onion flakes, bouillon, sugar, paprika, cumin, garlic powder, chili powder, and cayenne pepper. Process until well combined and crumbly. Add 1 tablespoon at a time of extra vegetable broth if the mixture is too dry.
  2. In a large skillet, heat 1 tablespoon of oil on medium-high heat and add the 2 Tablespoons of minced fresh onions. Sauté until lightly browned. Add the lentil filling mixture from the food processor to the skillet and heat, breaking it up with a spoon, until browned and heated through.
  3. Warm corn tortillas. Fill each tortilla generously with the plant-based taco meat, and top with fresh minced cilantro and diced onion, if using. Serve immediately.

  • Don’t skip warming the corn tortillas. It softens them and makes them easier to fold without breaking, plus they taste significantly better.
