It’s a wonderful way to use ripe bananas and ensure you always have something convenient on hand. If banana bread isn’t your preference, don’t worry – there are plenty of other options like cereal or oatmeal planned for later in the week.

Lunch: For a protein-packed and satisfying lunch, I created a variation of our popular Chickpea Salad, utilizing the ingredients from our budget-friendly grocery list. I used three cups of pre-cooked chickpeas, omitted the dill pickle, and incorporated one medium spoonful of canned tomatoes, one-third of the green bell pepper, and a fresh garlic clove, doubling the mustard for extra flavor. This recipe yields 2-3 generous servings, making it perfect for meal prepping and enjoying over the next couple of days.
