Transform brown sugar pineapple glazed ham into a vegan holiday centerpiece with this simple pineapple glazed tofu recipe – complete with marinade, glaze, cloves, & pineapple and maraschino cherry topping!

Ingredients

For the Tofu Marinade:

  • ½ cup soy sauce (or tamari/coconut aminos for gluten-free)
  • 1 teaspoon hickory liquid smoke
  • ½ teaspoon garlic powder (or 1-2 cloves fresh minced garlic)
  • 2 (16-ounce) packages extra-firm tofu, thoroughly drained and pressed
  • ~24 whole cloves
  • 2 tablespoons pineapple juice

For the Pineapple Glaze:

  • ¼ cup reserved pineapple juice
  • ¼ cup brown sugar (or coconut sugar/maple syrup)
  • Pinch of cinnamon

Tofu Topping: (Optional, for presentation)

  • 4 pineapple rings (fresh or canned)
  • 5 maraschino cherries

Instructions

  1. In a large rectangular storage container or shallow dish, whisk together the soy sauce, liquid smoke, garlic powder, and 2 tablespoons of pineapple juice.
  2. After the tofu has been pressed for at least 30 minutes, place the blocks side-by-side in the marinade container. Score the top of each tofu block by making ½-inch deep diagonal cuts, creating a diamond pattern. Gently stick a whole clove into the tip of each diamond (approximately 12 cloves per block).
  3. Pour the prepared marinade over the tofu. Secure the lid on the container (or use a resealable bag) and gently shake or flip to ensure the tofu is fully coated. Allow it to marinate for 30 minutes. Shake or flip again, then continue marinating for an additional 15 minutes (or ideally, overnight in the refrigerator for deeper flavor).
  4. While the tofu marinates, prepare the glaze: In a small bowl, combine the reserved ¼ cup pineapple juice, ¼ cup brown sugar, and a pinch of cinnamon. Whisk until well combined and the sugar begins to dissolve.
  5. Preheat your oven to 390°F (200°C).
  6. Transfer the marinated tofu blocks (without the excess marinade) to an oven-safe baking dish. Bake for 45 minutes, monitoring every 10-15 minutes to prevent burning, as the sugar can caramelize quickly.
  7. After 45 minutes, remove the dish from the oven. Carefully arrange the pineapple rings on top of the tofu blocks, placing maraschino cherries in the center of each pineapple ring. Using a basting brush, generously apply half of the prepared pineapple glaze over the tofu and toppings.
  8. Return the dish to the oven and bake for another 30 minutes, allowing the glaze to set and caramelize beautifully.
  9. Once baking is complete, remove from the oven. Carefully remove all the whole cloves from the tofu before serving. Using the basting brush, apply the remaining glaze (you can optionally simmer it on the stovetop for a few minutes to thicken and make it glossier if desired). Slice and serve immediately.
