Crafting the Hearty Potato & Chickpea Filling

  • Potatoes: For the best texture, opt for a russet potato or another waxy variety that will beautifully hold its shape during cooking. Sweet potato or even butternut squash are fantastic alternatives for a different flavor profile.
  • Chickpeas (Garbanzo Beans): We typically use convenient canned chickpeas (regular or low sodium for healthier options). However, if you prefer, freshly home-cooked chickpeas also work wonderfully. For a change, black beans make an excellent substitute, offering a slightly different earthy taste.
  • Cumin: This spice is crucial for imparting a wonderfully savory, earthy depth to the filling, characteristic of classic taco flavors.
  • Salt & Pepper: These fundamental seasonings are essential to enhance and balance the flavors of the potatoes and chickpeas. Adjust to your personal taste.
  • High-Heat Oil: A small amount of a high-heat cooking oil (such as canola, grapeseed, or sunflower oil) is used for sautéing the chickpeas to perfection.

Pro Tip for Enhanced Flavor: To elevate the “taco meat” filling, consider incorporating a pinch of onion powder and garlic powder for more aromatic notes, a dash of oregano for an earthy herbal touch, smoked paprika for a hint of smokiness, and a touch of chili powder or cayenne powder for a gentle warmth or spicy kick. While we advocate for fresh seasoning, feel free to use a quality store-bought taco seasoning if that fits your preference and schedule.

Complementary Taco Components

  • Corn Tortillas: Whether you choose store-bought or homemade, soft corn tortillas are ideal. For added convenience and a satisfying crunch, pre-made hard-shell tacos are also a great option that saves you a step or two in preparation.
  • High-Heat Oil: A crucial element for preparing the tortillas. Remember to use an oil with a high smoke point (e.g., canola, grapeseed, or vegetable oil) and avoid olive oil, which can burn at higher temperatures.
  • Fresh Vegetables: These garbanzo bean tacos are beautifully complemented by crisp, fresh veggies. Our top recommendations include:
    • Lettuce: Shredded iceberg lettuce or finely sliced purple cabbage adds a delightful crunch and fresh bite.
    • Tomatoes: One large, ripe tomato or a handful of sweet cherry tomatoes, diced, provides juicy sweetness and acidity.
    • Corn: Fresh, frozen (and thawed), or canned corn kernels are perfect. Optionally, grill them lightly for a smoky char.
  • Lemon Wedges (or Lime): Absolutely do not skip this! A fresh squeeze of lemon or lime juice over the assembled tacos brightens all the flavors and adds a zesty finish that truly ties the dish together.
  • Hot Sauce (Optional): For those who love a bit of heat, a drizzle of your favorite hot sauce, like sriracha, adds an extra layer of flavor and kick.

Step-by-Step: Crafting Your Vegan Chickpea & Potato Tacos

  1. Prepare the Tortilla Shells: Begin by preheating your oven to 375°F (190°C). Lightly spray or brush both sides of your corn tortillas with a high-heat cooking oil. Once the oven is preheated, carefully drape each tortilla over two metal bars of your oven rack, allowing them to form a folded, hard-shell shape. Bake for 8-10 minutes until lightly crisp. Remove from the oven and set aside.
  2. Process shot showing a corn tortilla being sprayed with cooking oil before baking to create crispy taco shells.

Tip: The tortillas will be pliable when hot but will firm up and become crispy as they cool down, creating perfect taco shells.

  3. Cook the Potatoes: While the tortillas are baking, peel and chop one russet potato into small ½-inch cubes. Place the cubed potatoes in a medium saucepan, cover generously with salted cold water, and bring to a boil. Cook over medium-high heat for 8-10 minutes, or until the potato pieces are tender when pierced with a fork. Drain the water thoroughly and season the cooked potatoes to taste with salt and pepper.
  4. Process shot of diced potatoes being added to a saucepan filled with water, ready for boiling.
Process shot of seasonings being sprinkled over cooked diced potatoes in a pot.
  5. Sauté the Chickpeas: At the same time the potatoes are cooking, drain and thoroughly pat dry ½ a (15-ounce) can of chickpeas. Transfer the dried chickpeas to a preheated medium-sized frying pan. Add ¼-½ teaspoon of cumin. Cook over medium-high heat for 3-5 minutes, stirring occasionally, until the chickpeas are warmed through and slightly browned.
  6. Process shot of chickpeas being added to a hot frying pan for sautéing.
Process shot of cumin being sprinkled over chickpeas in a frying pan.
Process shot of chickpeas being actively cooked and stirred in a frying pan, becoming golden.

For Crispier Chickpeas: For an extra crispy texture, add a small amount of cooking oil to the pan before the chickpeas and heat until shimmering. Sauté the chickpeas until they are golden brown and slightly crispy. Ensure they are very dry before adding to hot oil to prevent splattering.

  7. Assemble and Serve: It’s time to build your delicious tacos! Layer the seasoned potatoes, savory chickpeas, fresh shredded lettuce, and diced tomatoes into each crispy tortilla shell. Optionally, drizzle with your favorite hot sauce for an added kick. Serve each taco with a fresh lemon or lime wedge, allowing everyone to add a bright, zesty finish to their liking. Enjoy immediately!

Alternative Methods for Warming Tortillas

If you prefer soft tortillas or want to heat them without creating hard shells, here are several popular and effective methods:

  1. Oven Wrapped in Foil: Stack your desired number of tortillas, wrap them tightly in aluminum foil, and warm them in a preheated oven at 350°F (175°C) for 10-15 minutes. This method keeps them soft and pliable.
  2. Dry Skillet Toasting: Heat a dry skillet over medium-high heat. Place individual tortillas in the hot skillet for 20-30 seconds per side, flipping once, until they are warm and slightly flexible with a few brown spots.
  3. Gas Stove Flame: Using tongs, carefully hold individual tortillas directly over the open flame of a gas stovetop for 10-20 seconds per side. This method adds a wonderful smoky char and unique flavor.

Keeping Them Warm: After heating tortillas using methods 2 or 3, immediately stack them and cover them with a clean kitchen towel. This helps trap the steam and keeps them warm and soft until you’re ready to assemble your tacos.

Expert Tips for Perfect Potato and Chickpea Tacos

  • Time-Saving Shortcut: For ultimate convenience, bypass the tortilla baking step entirely by opting for store-bought hard-shell tacos. This can cut down your prep time significantly.
  • Ensure Dry Chickpeas: Before adding chickpeas to the pan, ensure they are thoroughly drained and patted dry. Excess moisture can cause hot oil to splatter and prevent them from achieving a desirable crispy texture.
  • Achieving Crispy Potatoes: To get wonderfully crispy potato pieces, after boiling and draining, allow them to steam in the hot pot for a few minutes to dry out their surfaces. Then, toss them with a bit of oil and seasonings, and pan-fry them without stirring too frequently. This allows a golden-brown crust to form.
  • Customize Your Seasoning: While our recipe offers a simple and delicious base, feel free to personalize the flavor profile. Enhance the aromatic depth with onion or garlic powder, add smokiness with smoked paprika, introduce an herbal note with oregano, or boost the heat with chili or cayenne powder.
  • Maximize Efficiency: The 20-minute preparation time is achievable by effectively multitasking. While the oven preheats for tortillas, prepare your vegetables (rinsing, chopping) and begin cooking the potatoes and chickpeas simultaneously. This streamlined approach makes quick work of dinner.

Frequently Asked Questions About Vegan Chickpea Tacos

Can you cook canned chickpeas?

Canned chickpeas are indeed pre-cooked and ready to eat directly from the can. However, they can certainly be reheated and incorporated into recipes. Just be mindful not to overcook them, as prolonged heat can cause them to become mushy and lose their texture.

What plant-based proteins can I put in a taco?

For delicious and protein-rich vegan taco fillings, we highly recommend options like tofu, tempeh, chickpeas, various types of beans (black beans, pinto beans), and lentils. These all offer fantastic texture and absorb flavors beautifully.

How else can I use the leftover chickpea and potato filling?

Leftover chickpea and potato filling is incredibly versatile! You can easily repurpose it by adding it to pasta salads, enhancing salad bowls, stuffing wraps, or mixing it into grain bowls for a hearty and flavorful boost.

Can I serve these with soft tortillas?

While we adore the crisp texture of hard-shell tacos with this filling, these flavors are equally delicious with soft tortillas. Feel free to use your preferred regular corn tortillas or soft flour tortillas for a different, yet equally enjoyable, experience.

Creative Additions & Topping Ideas for Your Chickpea Tacos

The beauty of tacos lies in their customizability. Here are some fantastic ingredients you can add to further enhance your potato and chickpea tacos, making each bite an adventure:

  • Sautéed Mushrooms: Add some pan-fried or roasted mushrooms for an extra layer of umami, texture, and tenderness that pairs wonderfully with the chickpeas.
  • Additional Vegetables: Don’t limit yourself! Incorporate a variety of fresh or roasted veggies like thinly sliced zucchini, vibrant bell peppers, or tender eggplant for more color and nutrients.
  • Pico de Gallo: A classic fresh tomato-based salsa, or any other homemade summer salsa, adds a burst of freshness and zing.
  • Crunchy Slaw: For an irresistible textural contrast and an extra layer of freshness, try a simple vegan coleslaw.
  • Avocado: Whether sliced, diced, or transformed into creamy guacamole, avocado adds a rich, healthy fat that complements the filling perfectly.
  • Refried Beans: Spread a layer of warm refried beans on your tortilla. They offer a creamy base and an additional protein boost.
  • Jalapeño Slices: For those who crave more heat, thinly sliced fresh or pickled jalapeños deliver a fiery punch.
  • Fresh Herbs: A sprinkle of fresh cilantro or finely chopped parsley as a garnish brightens the overall flavor.
  • Vegan Sour Cream or Crema: A dollop of a rich, tangy vegan sour cream or a similar creamy sauce provides a wonderful counterpoint to the spicy and savory flavors.
  • Vegan Cheese: Shredded vegan cheese, melted slightly by the warm filling, adds a familiar and comforting element to these chickpea potato tacos.
  • Pickled Red Onions: These offer a delightful sweet, tangy, and slightly pungent flavor with a beautiful pop of color.

Our Favorite Topping Combination: For an ultimate flavor experience, we highly recommend combining creamy guacamole (which pairs exceptionally well with the earthy chickpeas), fresh pico de gallo, and a generous dollop of vegan sour cream.

Meal Prep, Storage, and Reheating Instructions

To ensure the best texture, enjoy your assembled tacos promptly to prevent the shells from becoming soggy. However, the individual components can be prepared in advance and stored separately for convenient meal prepping.

Store any leftover filling ingredients (chickpeas, potatoes, or fresh salad veggies) in separate airtight containers in the refrigerator. The fresh vegetables will stay crisp for 3-4 days, while the cooked chickpeas and potatoes can be stored for up to a week.

When reheating, we recommend warming the chickpeas in a skillet with a tiny bit of oil to help them regain some of their appealing crispy texture. The cooked potatoes can also be pan-fried for crispiness or gently reheated in the microwave for a softer consistency. Prepare fresh toppings just before serving for the best results.

These potato and chickpea tacos with fresh veggies are a super simple, crowd-pleasing, delicious weeknight meal ready in just 20 minutes!

Equipment

  • My favorite knives
  • Measuring spoons

Ingredients

  • 4 corn tortillas
  • 1 russet potato, skinned & cubed into bite-sized pieces
  • Salt & pepper, to taste
  • ½ (15-ounce) can of chickpeas
  • ¼-½ teaspoon of cumin
  • ½ tablespoon of high-heat oil (optional, for crispier chickpeas)
  • 1 to 2 leaves of lettuce, torn into strips
  • 1 tomato, chopped
  • ½ (15.25-ounce) can of corn (canned, frozen, or fresh)
  • Lemon wedges (1 per taco)
  • Hot sauce (optional)

Instructions

  1. Preheat the oven to 375°F (190°C). Prepare your tortillas by spraying or brushing high-heat cooking oil on both sides. Once the oven is heated, carefully drape your tortillas over two oven rack bars so they fold over, creating a taco shell shape. Cook for 8-10 minutes. Remove from oven and set aside to cool and crisp.
  2. Place cubed potatoes with a pinch of salt into a medium-sized pot, cover with cold water, and bring to a boil. Heat on medium-high for 8-10 minutes until soft. Drain thoroughly and season with additional salt or pepper to taste.
  3. Place drained and patted-dry chickpeas in a small or medium-sized frying pan (add ½ tablespoon high-heat oil first for crispier chickpeas). Add cumin. Cook on medium-high heat for 3 to 5 minutes or until warmed through and slightly browned.
  4. Assemble your tacos! Layer the seasoned potatoes, savory chickpeas, chopped tomatoes, and shredded lettuce in your crisp tortillas. Squeeze one lemon wedge over each taco for a burst of fresh flavor. If desired, drizzle with hot sauce. Serve immediately and enjoy!

Notes

  • Please note to use high-heat oil for cooking and preparing tortillas.
  • To save time/effort: Use store-bought hard-shell tacos.
  • Make sure the chickpeas are dry: Otherwise, the hot oil may splatter, and they won’t become as crispy.
  • For crispy potatoes: After cooking, allow them to steam in the pot for several minutes to dry the outside, then toss with oil and seasonings and pan-fry until crispy (don’t stir them too often for a crust to form).
