Key Ingredients for Your Homemade Tomato Potato Soup
The beauty of this vegan tomato soup recipe lies in its reliance on easily accessible ingredients found at any local grocery store. Here’s a closer look at what you’ll need to create this comforting dish:

- Oil: A small amount of your favorite cooking oil (like olive oil or avocado oil) is used to sauté the vegetables, building a foundational layer of flavor.
- Aromatics: A classic blend of finely chopped onion, carrots, celery, and minced garlic forms the aromatic base, adding depth and a sweet-savory complexity to the soup.
- Veggies: We’ve chosen tender zucchini and earthy mushrooms for this version, which meld beautifully with the tomato. Remember, this is your canvas – feel free to swap them for other vegetables you enjoy or need to use up, like bell peppers, green beans, or even corn.
- Tomato Paste: This concentrated ingredient is key! Tomato paste delivers a far more intense, rich, and deeply savory tomato flavor than fresh tomatoes or plain tomato sauce, making the soup incredibly robust.
- Vegetable Broth: Using a good quality vegetable broth instead of just water provides a significant boost in flavor, creating a more complex and satisfying liquid base for your soup.
- Herbs and Seasonings: Simple yet powerful, a bay leaf, fragrant thyme, salt, and freshly ground black pepper are all it takes to season this tomato potato soup to perfection, enhancing all the natural flavors.
- Potato: The star alongside the tomato! Any variety of potato works wonderfully here, whether it’s a starchy russet, a waxy red, or a creamy Yukon Gold. They add heartiness and a natural creaminess when cooked.
Clever Substitutions for Your Tomato Potato Soup
This recipe is incredibly forgiving and adaptable. Don’t have an ingredient on hand, or looking to tweak it to your dietary needs? Here are some easy substitutions:
- Oil-Free Cooking: If you prefer to reduce or skip oil entirely, you can easily sauté the vegetables in a splash of water or vegetable broth instead. This method still allows the vegetables to soften and release their flavors.
- Sweet Potatoes for a Twist: For a slightly sweeter flavor profile and an added boost of vitamins, try making tomato sweet potato soup! Sweet potatoes impart a lovely sweetness and a vibrant orange hue to the finished dish.
- Vegetable Broth Alternatives: While vegetable broth adds a rich flavor, you can certainly use water alone if that’s what you have. Just remember to add a bit more seasoning to compensate. Alternatively, dissolve your favorite vegetable bouillon in water for an instant flavor enhancer.
How To Craft Your Delicious Tomato Soup with Potatoes
Making this hearty vegan soup is straightforward. Follow these simple steps for a truly comforting and flavorful meal:
- Sauté the Base: In a large, heavy-bottomed soup pot or Dutch oven, heat the cooking oil over medium-high heat. To prevent sticking and reduce the amount of oil, add a tablespoon or two of water alongside the oil. Once shimmering, add the chopped onions, carrots, zucchini, sliced mushrooms, and celery. Cook these vegetables, stirring occasionally, until the onions become tender and translucent, typically 5-7 minutes.
- Infuse with Garlic: Add the minced garlic to the pot. Stir it quickly for about 30 seconds until fragrant, being extremely careful not to burn it, as burnt garlic can taste bitter.
- Build the Liquid Base: Pour in the tomato paste, vegetable broth, and add the bay leaf, salt, pepper, and thyme. Stir everything together until the tomato paste is fully dissolved and incorporated. Then, add the chopped potatoes and stir once more to ensure they are well distributed. Increase the heat to high and bring the soup to a rolling boil.
- Add Potatoes and Simmer: Stir in the chopped potatoes, ensuring they are submerged in the liquid. Bring the soup to a boil over high heat.
- Simmer to Perfection: Once the soup reaches a vigorous boil, reduce the heat to low, cover the pot with a lid, and let it gently simmer for about 20 minutes. Continue cooking until all the vegetables, especially the potatoes, are perfectly tender.
- Optional Blending for Creaminess: For those who love a velvety, smooth soup, this step is for you! Carefully ladle about half of the cooked soup mixture into a high-speed blender (or use an immersion blender directly in the pot). Blend until it’s completely smooth and creamy. Then, return the blended portion to the soup pot and stir it thoroughly with the chunky remaining soup. This creates a beautiful texture contrast and adds incredible richness.
- Serve Hot: Remove the bay leaf before serving. Ladle the hot soup into bowls and serve immediately.

Expert Tips for the Best Vegan Tomato Potato Soup
Elevate your homemade tomato soup with these helpful tips and tricks:
- Mastering the Sauté: You have options for sautéing! Using water alone (or a combination of oil and water) is an excellent technique to significantly reduce the overall fat content of the recipe without sacrificing flavor. The water helps cook the vegetables evenly while preventing sticking.
- Embrace Vegetable Creativity: Don’t feel bound by the recipe’s suggested vegetables. This soup is incredibly forgiving! Feel free to swap out zucchini and mushrooms for other seasonal favorites like spinach, kale, green beans, or even diced bell peppers. The possibilities are truly endless, allowing you to customize it to your personal taste and what’s available.
- Always Taste and Adjust: Once the soup has finished cooking and the flavors have had a chance to meld, give it a taste. Adjust the seasonings (salt, pepper, or even a pinch more thyme) to your liking. A little extra seasoning can make a big difference!
- To Blend or Not to Blend?: The decision to blend your tomato potato soup is entirely optional and depends on your preferred texture. While not strictly necessary, blending half of the soup adds an undeniable creaminess and a luxuriously smooth mouthfeel, making it even more satisfying. If you have an immersion blender, it makes this step incredibly quick and easy directly in the pot.
Frequently Asked Questions About Vegan Tomato Soup
Potatoes are your secret weapon for thickening! As the potatoes cook and soften in the soup, they release their starches. When you blend a portion of the soup (especially the potato-rich sections), those starches create a deliciously thick, creamy, and naturally rich texture without the need for any plant-based milks or added thickeners.
Beyond the bay leaf and thyme in this recipe, several seasonings can wonderfully elevate tomato soup. Some of my personal favorites include dried oregano, fresh basil (added at the end), a pinch of red pepper flakes for heat, a dash of smoked paprika for depth, or even a swirl of harissa or hot sauce for a spicy kick. A touch of marjoram or a bay leaf can also add a nice herbal note. Don’t forget to balance the acidity with a tiny pinch of sugar if needed.
Not always, unfortunately! While tomatoes and most vegetables are vegan, many creamy tomato soups, especially those found in cans or served at restaurants, often contain dairy products like heavy cream, butter, or even cheese for richness. Each recipe varies, so it’s crucial to check the ingredient list carefully when buying canned soup or explicitly ask about dairy content when dining out.

Storing and Reheating Your Tomato Potato Soup
This homemade vegan tomato soup is fantastic for meal prep! Here’s how to store and reheat it:
- Storing Leftovers: Allow any leftover potato tomato soup to cool completely before transferring it to an airtight container. It will keep beautifully in the refrigerator for up to five days. For longer storage, you can freeze it for up to three months. Portioning it into individual containers makes for quick and easy future meals.
- Reheating: When you’re ready to enjoy your frozen soup, simply thaw it overnight in the refrigerator. Transfer the soup to a pot and gently reheat it over medium heat on the stovetop, stirring occasionally, until it’s hot and bubbly. If the soup appears too thick after chilling or freezing, add a splash of water or extra vegetable broth to achieve your desired consistency.
Serving Suggestions: What to Pair with Tomato Potato Soup
This versatile plant-based tomato soup can be a light appetizer, a hearty main course, or a delightful side. Here are some ideas to make it even more special:
- Elevate with Toppings: A simple garnish can transform your soup! Consider crunchy croutons, classic oyster crackers, a sprinkle of fresh chopped basil or parsley, a swirl of plant-based cream, or even some toasted pumpkin seeds for extra crunch.
- Pair with a Hearty Sandwich: For a more substantial and classic meal, serve a generous bowl of your tomato potato soup with half of a delicious sandwich. This soup pairs beautifully with a grilled “cheese” sandwich, a spicy buffalo tofu sandwich, or a simple yet flavorful vegan bagel sandwich with pesto.
- A Wonderful Appetizer or Starter: This soup also makes a fantastic and comforting start to almost any meal. It’s a lovely prelude to a fresh lentil and chickpea salad with tahini dressing or a wholesome quinoa sweet potato bowl.
