Essential Ingredients for Perfect Lentil Meatballs

Crafting these delicious vegan lentil meatballs begins with a selection of readily available and wholesome ingredients. Most of what you’ll need can be found at your local grocery store. For precise measurements, please refer to the complete recipe card located further down the page. But first, let’s explore the key players that bring these meatballs to life:

  • Brown or Green Lentils: These are the heroes of our recipe. Brown and green lentils are affordable, widely accessible, and hold their shape well after cooking, making them ideal for a firm, satisfying meatball texture. They provide a rich, earthy base and are packed with plant-based protein and fiber. If you’re curious to learn more about different types of lentils and their uses, be sure to check out our comprehensive guide to lentils.
  • Vegetable Broth: Instead of plain water, cooking the lentils in vegetable broth infuses them with an extra layer of savory flavor right from the start. This simple step significantly enhances the overall taste profile of your meatballs.
  • Mushrooms: When finely chopped, mushrooms contribute a wonderful tender texture and a deep umami flavor that mimics the savory notes often found in traditional meat dishes. They are crucial for creating a rich and satisfying bite. Any common variety like cremini or white button mushrooms will work beautifully.
  • Old-Fashioned Oats: An absolutely essential ingredient, old-fashioned oats act as the primary binder, holding all the ingredients together to form perfectly shaped meatballs. They also add a subtle chewiness and healthy fiber, contributing to the hearty texture. Do not substitute with quick oats, as they can lead to a mushier texture.
  • Fresh Flat-Leaf Parsley: Fresh herbs are key to brightening the flavors. Flat-leaf parsley, with its vibrant, slightly peppery notes, is preferred over curly parsley for its more pronounced flavor and easier chopping. It adds a fresh, herbaceous lift to the rich mixture.
  • Dried Herbs and Spices: This blend is where much of the classic “meatball” flavor comes from.
    • Bay Leaf: Cooked with the lentils, it imparts a subtle, aromatic background note.
    • Dried Oregano: A cornerstone of Italian seasoning, offering a warm, earthy, and slightly bitter aroma.
    • Red Pepper Flakes: Just a touch adds a gentle warmth and a hint of spice, elevating the flavor without overpowering it. Adjust to your preference for heat.
    • Dried Thyme: Earthy and slightly minty, thyme complements the savory mushrooms and lentils perfectly.
    • Dried Tarragon: Often associated with a subtle anise or licorice flavor, tarragon adds a unique and sophisticated herbal note that truly distinguishes these meatballs.

For tips on keeping your herbs fresh, refer to our guide on how to properly store herbs.

  • Olive Oil: Used for sautéing the aromatics and contributing to the overall richness. Extra virgin olive oil offers the best flavor, but any neutral vegetable oil can be used as a substitute.
  • Aromatics (Onion and Garlic): The foundational flavor builders. Finely diced onion and freshly minced garlic cloves are sautéed to create a fragrant base, adding depth and complexity to the meatball mixture. Fresh garlic is highly recommended for the best flavor.
  • Soy Sauce: A secret weapon for boosting umami. A tablespoon of soy sauce (or tamari for a gluten-free option) deepens the savory profile, giving the meatballs a richer, more complex taste that resonates with traditional flavors.
  • Salt and Pepper: Essential for seasoning to taste, ensuring all the flavors are balanced and pronounced.

Step-by-Step: How to Craft Your Own Vegan Lentil Meatballs

Making these vegan lentil meatballs is a rewarding process that’s simpler than you might think. Follow these clear steps to create perfectly textured and flavorful plant-based delights. Remember, precision in cooking makes all the difference for a truly outstanding result!

Before You Begin: Preheat your oven to 400°F (200°C). Line a standard baking sheet with a silicone mat or parchment paper to prevent sticking and ensure even baking.

  • 1) Prepare the Lentils: In a medium-sized saucepan, combine the dried brown lentils (after picking them over and rinsing thoroughly), one bay leaf, and 2 cups of vegetable broth. Bring this mixture to a rolling boil over medium-high heat. Once boiling, reduce the heat to low, cover the saucepan, and let the lentils simmer gently for exactly 10 minutes. This precise cooking time is crucial because you want the lentils to be slightly undercooked; they will continue to cook in the oven later, and this prevents overly soft or mushy meatballs. After 10 minutes, remove the saucepan from the heat, drain the lentils thoroughly, and discard the bay leaf. Allow the cooked lentils to cool for a few minutes while you prepare the next steps.

PRO TIP: An essential secret to perfect lentil meatballs is to slightly undercook the lentils in the initial boiling stage. This ensures they maintain a desirable firmness and texture, preventing the meatballs from becoming overly soft or crumbly once baked, as they will continue cooking in the oven.

  • 2) Process the Mixture: Transfer the cooled, undercooked lentils into a food processor. Add the diced mushrooms, old-fashioned oats, fresh flat-leaf parsley, and your blend of dried spices (dried oregano, red pepper flakes, dried thyme, and dried tarragon). Pulse the food processor until all the ingredients are finely chopped and well combined. The goal is a texture that’s thoroughly pulverized but not turned into a completely smooth mush. You want some small pieces and texture to remain for that authentic meatball feel.

  • 3) Sauté Aromatics and Meatball Base: Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the diced medium white onion along with a pinch of salt to help draw out moisture and flavor. Cook, stirring frequently, for about 5 minutes, or until the onions become translucent and begin to turn golden around the edges. Next, add the minced garlic cloves to the skillet and cook for another 30 seconds, stirring constantly, until fragrant. Be careful not to burn the garlic. Immediately stir in the processed lentil-mushroom mixture. Continue to cook, stirring constantly, for approximately 5 minutes, allowing the mixture to brown and deepen in flavor. This step is crucial for developing the umami and creating a richer, more complex taste profile for your meatballs.

  • 4) Deglaze and Flavor Infusion: Pour in the remaining ¼ cup of vegetable broth and the tablespoon of soy sauce into the skillet with the lentil mixture. Continue to cook, stirring constantly, allowing the liquid to be fully absorbed by the mixture. This step helps to deglaze the pan, picking up all those delicious browned bits, and further infuses the meatballs with rich, savory flavors.

  • 5) Cool and Season: Once the liquid is absorbed, remove the skillet from the heat. If you’re using a pan that retains heat well (like cast iron), transfer the mixture immediately to a separate heat-safe bowl to prevent overcooking. Season the mixture generously with salt and black pepper to taste. It’s important to let the mixture cool sufficiently until it is comfortable enough to handle by hand – this usually takes about 15-20 minutes. A cooled mixture is much easier to shape and prevents the meatballs from falling apart.
  • 6) Shape the Meatballs: Once the mixture has cooled to a manageable temperature, use your hands to scoop out small, equal portions. For consistency, aim for golf-ball-sized balls, roughly 1 ½-inch in diameter. Gently roll and compress each portion between your palms until it forms a firm, round shape. Uniform size is key for even cooking.

  • 7) Bake to Perfection: Carefully place each shaped lentil “meatball” onto your prepared baking sheet, ensuring you leave at least an inch of space around each one. This prevents overcrowding, allowing them to brown evenly and develop a delightful crispy exterior. You should yield approximately 15 or more meatballs from this recipe. Transfer the baking sheet to your preheated oven and bake for 35 minutes, or until the meatballs are beautifully golden brown and firm to the touch.

Expert Tips for the Best Vegan Lentil Meatballs

Achieving perfectly textured and flavorful vegan lentil meatballs is all about a few key techniques. Follow these expert tips to ensure your meatballs come out firm, savory, and irresistibly delicious every time:

  • Ensure Uniform Size: For even cooking and consistent results, it’s crucial that all your meatballs are roughly the same size. A standard tablespoon or a small cookie scoop can be incredibly helpful for portioning the mixture accurately. This ensures that each meatball cooks through at the same rate, preventing some from being undercooked while others become overdone.
  • Strategic Undercooking of Lentils: As mentioned in the instructions, don’t worry if your lentils seem slightly firm after the initial 10-minute simmer. This is intentional! The lentils will continue to cook and soften in the oven. Beginning with slightly undercooked lentils prevents the final meatballs from becoming overly soft or mushy, ensuring they have a pleasant, firm bite.
  • Proper Spacing on the Baking Sheet: When placing your shaped meatballs on the baking sheet, always leave at least an inch of space between each one. Overcrowding the baking sheet can lead to steaming instead of baking. This results in meatballs that are wet and soft rather than beautifully browned and slightly crispy on all sides. Give them room to breathe and crisp up!
  • Don’t Skip the Sautéing Step: The step where you cook the processed lentil-mushroom mixture in the skillet with aromatics is vital. This browning process deepens the umami flavor and helps to dry out the mixture slightly, which contributes to a firmer meatball texture and prevents them from being too moist.
  • Allow the Mixture to Cool: Before shaping, ensure the meatball mixture has cooled down significantly. A warm mixture is much more difficult to handle and shape, often sticking to your hands or crumbling. Cooling allows the oats to fully absorb moisture and the mixture to firm up, making it much easier to roll into perfect spheres.
  • Adjust Spices to Your Liking: The herb and spice blend in this recipe provides a classic flavor profile, but feel free to adjust it to suit your preferences. Want more heat? Add extra red pepper flakes. Prefer a different herb? Experiment with basil or rosemary. Tasting the mixture before baking is an excellent way to fine-tune the seasoning.

Frequently Asked Questions About Vegan Lentil Meatballs

Here are some common questions about making and enjoying these versatile vegan lentil meatballs:

Can I use red or yellow lentils instead of brown or green lentils?

For this particular recipe, I strongly advise against using red or yellow lentils. These types of lentils break down very easily and become quite mushy when cooked, which would result in a soft, undesirable texture for your meatballs. Brown or green lentils are recommended because they maintain their structure better, giving the meatballs the firm, meaty bite we’re aiming for.

Do lentil meatballs work well for meal prep?

Absolutely! These lentil meatballs are perfect for meal prepping. I often make a double batch to ensure I have plenty for meals throughout the week and beyond. They freeze beautifully and reheat wonderfully, making them incredibly convenient. Their versatility means you can incorporate them into different dishes, keeping your meal prep interesting and preventing flavor fatigue.

Are these lentil meatballs gluten-free?

This recipe is naturally gluten-free as long as you use certified gluten-free oats. Lentils are naturally gluten-free, and soy sauce can be easily swapped for tamari to maintain a gluten-free dish. Always double-check ingredient labels to ensure no hidden gluten is present.

Can I pan-fry or air-fry these meatballs instead of baking?

While baking is recommended for an even cook and firm texture, you can certainly pan-fry or air-fry for a slightly different result. To pan-fry, heat a little oil in a skillet over medium heat and cook the meatballs until golden brown and heated through, turning occasionally. For air frying, preheat your air fryer to 375°F (190°C) and cook for 15-20 minutes, shaking the basket halfway through, until crispy and heated through.

How can I make these meatballs spicier?

If you prefer more heat, simply increase the amount of red pepper flakes in the mixture. You could also add a pinch of cayenne pepper or a dash of your favorite hot sauce to the mixture before shaping. Taste and adjust to your desired spice level!

Storing and Reheating Your Vegan Lentil Meatballs

One of the many benefits of these vegan lentil meatballs is how well they store, making them ideal for meal prepping or enjoying leftovers. Proper storage ensures they retain their delicious flavor and texture for future meals.

  • Leftovers or Make Ahead: Once your meatballs are baked and have completely cooled to room temperature, transfer them to an airtight container. They can be stored in the refrigerator for up to five days, making them a fantastic option for quick weeknight dinners. For longer storage, these meatballs freeze exceptionally well. Arrange them in a single layer on a baking sheet and freeze until solid, then transfer them to a freezer-safe bag or container. They will keep beautifully in the freezer for up to three months. This method prevents them from sticking together and makes it easy to grab just the amount you need.
  • Reheat: To reheat refrigerated meatballs, you can warm them in the microwave, on the stovetop with a little sauce, or in the oven. For the best texture and to regain some of their original crispiness, I highly recommend reheating them in the oven. If frozen, thaw the meatballs in the refrigerator overnight first. Then, place them on a baking sheet and reheat in a preheated oven at 350°F (175°C) for about 10-15 minutes, or until thoroughly heated through and slightly crispy on the outside. This method brings them back to life perfectly, ensuring they’re just as enjoyable as when they were first made.

These lentil meatballs made with cooked lentils, oats, mushrooms, herbs, and spices make a hearty vegan meatball that’s perfect to add to marinara sauce and serve up with a bowl of spaghetti. They taste great and go together pretty easily!

Equipment

  • Measuring Cups
  • Measuring spoons
  • My favorite knives
  • Baking tray
  • Food Processor

Ingredients

1x2x3x

  • 1 cup of dried brown lentils picked over and rinsed
  • 1 bay leaf
  • 2 ¼ cups of vegetable broth divided
  • 8 ounces of mushrooms diced
  • ½ cup of old-fashioned oats
  • ½ cup of flat-leaf parsley leaves
  • 1 teaspoon of dried oregano
  • ½ teaspoon of red pepper flakes
  • ½ teaspoon of dried thyme
  • ½ teaspoon of dried tarragon
  • 2 Tablespoons of olive oil
  • 1 medium white onion diced
  • 4 garlic cloves minced
  • 1 Tablespoon of soy sauce
  • Salt and pepper to taste

Instructions

  • Preheat the oven to 400 degrees F and line a baking sheet with a silicone mat or parchment paper.
  • Combine lentils, bay leaf, and 2 cups of vegetable broth in a medium saucepan. Bring to a boil, then reduce heat to low and simmer for 10 minutes. (Don’t worry, you want the lentils to be a little undercooked.) Remove from heat, drain, and let cool for a few minutes. Discard the bay leaf.
  • In a food processor, combine the mushrooms, oats, lentils, parsley, and spices (oregano, red pepper flakes, thyme, and tarragon). Pulse/blend until the mixture is pretty well pulverized but not mush.
  • In a large skillet over medium heat, warm the olive oil, then add the chopped onion and a pinch of salt. Cook, stirring often, until onions are translucent and turning golden at the edges, about 5 minutes. Add the garlic and cook, stirring, for about 30 seconds. Stir in the lentil-mushroom mixture and cook until browned, about 5 minutes, stirring constantly.
  • Add ¼ cup of vegetable broth and soy sauce to the skillet. Continue to cook, stirring constantly, until liquid has been absorbed. Remove from heat and, if you’re using a pan that retains heat like cast iron, transfer the mixture to a heat-safe bowl. Season with salt and pepper to taste. Allow the mixture to cool until it is comfortable to handle.
  • Use your hands to scoop up one small handful of the mixture at a time, shaping it into a golf-ball-sized ball (about 1 ½-inch diameter). Place each “meatball” onto the baking sheet, leaving an inch of space around each one (you should end up with 15 or more meatballs). Bake for 35 minutes, or until golden brown.

Notes

Goes great on top of spaghetti and sauce!

  • Make meatballs evenly sized. You can use a tablespoon or small cookie scoop to make it easier to portion.
  • Make sure to undercook the lentils a bit. This will keep the meatballs from being overly soft and they will continue cooking in the oven anyway.
  • Leave space in between the vegan meatballs when cooking so they brown on all sides and get a bit crispy. If overcrowded they can come out a bit wet and soft.
