Meanwhile, if you stored your mushroom gravy separately, you can gently reheat it on the stovetop over low heat, stirring occasionally, or warm it quickly in the microwave until hot.

Ingredients
- 1 head of cauliflower
- 2 tablespoons of olive oil, divided
- Salt and pepper to taste
- 1 diced yellow onion
- 16 ounces of sliced mushrooms
- 2 teaspoons of fresh chopped sage
- 2 teaspoons of fresh chopped thyme
- 2 minced garlic cloves
- ½ teaspoon of salt
- Pepper to taste
- 1 can (15 ounces) of vegetable broth
- 3 tablespoons of all-purpose flour
Instructions
- Preheat the oven to 400 degrees F (200°C).
- Slice the head of cauliflower into 1-inch thick steaks. Rub with 1 tablespoon of olive oil and season with salt and pepper. Bake for 45 minutes, flipping halfway through.
- While the cauliflower is baking, heat the remaining 1 tablespoon of oil in a saucepan. Sauté the diced onion until translucent (4-5 minutes), then add the sliced mushrooms and cook until tender.
- Stir in the fresh sage, thyme, minced garlic, ½ teaspoon of salt, and pepper. Cook for 1 minute until fragrant.
- Gradually add the vegetable broth, stirring constantly. Then, add the flour one tablespoon at a time, stirring vigorously until the gravy thickens to your desired consistency.
- Plate your perfectly cooked cauliflower steaks and generously pour the warm mushroom gravy on top. Serve immediately.
