  9. Carefully squeeze about 4 to 5 inches of dough into the hot oil, using kitchen scissors to snip the strips as they release. Work in batches of 3 churros at a time to prevent overcrowding. Fry them for about 5 minutes, turning occasionally, until they are golden brown and crispy on all sides. Monitor constantly.
  10. With tongs, one by one, carefully pick up the hot churros out of the oil and allow them to drip any excess oil for a couple of seconds. Place the churros on a paper towel-lined plate for a maximum of 1 minute while you pipe another batch into the oil.
  11. Immediately transfer the hot, drained churros to the cinnamon sugar mixture. Roll and toss them until they are thoroughly coated on all sides.
  12. Repeat the frying, draining, and coating process until all the dough is used. Serve the vegan churros immediately while warm.

Notes

  • Always pipe the churros: Use a piping bag and a star tip, a churrera, or a large ziplock bag to pipe the dough into the oil. This creates their characteristic ridged shape and crispy texture.
  • Use a closed star tip when piping the churros: It gives the edges deeper, more defined ridges which become extra crispy and hold the cinnamon sugar better!
  • Heat the oil properly: If it’s not hot enough, the churros will soak up too much oil and become greasy and soggy. If it’s too hot, the oil will splatter, and the churros will burn on the outside while remaining raw inside. Aim for 350-375°F (175-190°C).
  • Use a candy thermometer to measure the temperature of the oil: This is the most accurate method. If you don’t have one, drop a small piece of dough into the oil as it’s heating up. If the dough sizzles and floats, the oil is ready.
  • Toss the churros in the cinnamon sugar while they’re hot: Remove them from the hot oil and let them drain for a maximum of 1 minute before tossing them. If the churros get too cool, the cinnamon sugar won’t stick effectively.
