Traditional risotto is a culinary art form, typically prepared with high-starch Arborio rice and requiring constant attention and gradual liquid addition. While undeniably delicious, it’s often reserved for special occasions or weekend projects due to its time-consuming nature. Our goal with this recipe was to create an equally decadent and comforting risotto experience using everyday pantry staples, making it accessible for any night of the week. We’re embracing convenience without sacrificing flavor or that signature creamy texture.

The magic behind this recipe’s luscious consistency lies in a brilliant plant-based innovation: a smooth and savory white bean puree. This clever addition elevates ordinary brown rice, imparting a rich, velvety texture and a subtle ‘cheesy’ depth, making it indistinguishable from a labor-intensive Arborio risotto. It’s a game-changer for anyone seeking a healthier, simpler, or plant-based alternative to the classic.

Brown rice is a whole grain, packed with essential nutrients, making this risotto a far more wholesome and satisfying option that keeps you feeling fuller for longer, contributing to overall digestive health.
  • Packed with Plant-Based Protein: The ingenious addition of white beans creates the luxurious creamy texture characteristic of risotto. But beyond texture, these humble beans are a powerhouse of plant-based protein and dietary fiber, transforming this indulgent dish into a truly nourishing and balanced meal without relying on dairy or heavy creams.
  • Effortless One-Bowl Meal for the Whole Family: This recipe is designed for maximum convenience. It comes together primarily in one large pan, minimizing cleanup and making it a perfect candidate for busy weeknights. Its rich flavor and comforting consistency appeal to all palates, making it a guaranteed family favorite, even for those skeptical about plant-based cuisine.
  • Quick, Easy & Hands-Off Preparation: Unlike traditional risotto which demands constant stirring and precise timing, our brown rice risotto cooking method is significantly more forgiving and less demanding. The brown rice cooks more independently, allowing you to multitask while dinner simmers, resulting in a stress-free cooking experience without compromising on taste or texture.
  • Ideal for Smart Meal Prep: Planning ahead makes healthy eating simpler. Many components of this delicious risotto can be prepared in advance, allowing you to have dinner on the table in as little as fifteen minutes on a busy night. Cook the brown rice and prepare the bean puree beforehand, then simply combine and finish the dish when you’re ready to eat.

Essential Ingredients for Your Creamy Brown Rice Risotto

Crafting this savory mushroom brown rice risotto relies on a combination of readily available pantry staples and a few fresh produce items. Let’s delve deeper into the key ingredients that give this dish its incredible flavor and signature creamy texture:

Ingredients for Creamy Brown Rice Risotto measured out against a clean white background.
  • Brown Rice: Our star ingredient! Simple, wholesome, and widely available. Brown rice provides a nutty flavor and a satisfying chewiness that stands up beautifully to the creamy sauce. While this recipe uses regular brown rice, you could experiment with medium-grain brown rice for a slightly softer finish, or even use white rice if preferred (remember to adjust cooking times accordingly, as white rice cooks much faster). For detailed cooking instructions, refer to our comprehensive guide on how to cook brown rice.
  • Vegetable Broth: This is crucial for building a rich flavor base. Using a high-quality store-bought vegetable broth or homemade stock infuses the rice with savory notes that water alone cannot provide, creating a deeper, more complex taste profile in your risotto.
  • Mushrooms: Sliced mushrooms add a fantastic umami depth and earthy flavor to the risotto. Feel free to use cremini (baby bella), white button, or a mix of your favorite varieties. For added convenience, pre-sliced mushrooms are a great time-saver. Their robust texture complements the creamy rice beautifully.
  • Olive Oil: A good quality extra virgin olive oil is preferred for its rich, fruity flavor and health benefits. It’s used for sautéing the mushrooms and contributing to the overall richness of the dish. If olive oil is not available, any neutral-flavored vegetable oil like avocado or canola oil will work well.
  • White Beans: This is our “secret weapon” for achieving that luxurious, creamy, and dairy-free texture. Great Northern beans or cannellini beans are excellent choices. Using canned beans makes this recipe incredibly quick and convenient; just remember to drain and rinse them thoroughly. If you have home-cooked white beans, use about 1 ½ cups in place of a standard 15-ounce can.
  • Nutritional Yeast: This magical ingredient is a staple in plant-based cooking. It provides a distinct savory, “cheesy” flavor without any dairy. It’s also packed with B vitamins. If you’re new to nutritional yeast or want to learn more about its benefits and uses, check out our informative guide to nutritional yeast.
  • Garlic Powder: An easy and effective way to infuse a subtle garlic flavor throughout the dish. For a more pungent garlic kick, you can substitute garlic powder with four cloves of fresh minced garlic, adding them to the pan when you sauté the mushrooms.
  • Salt and Pepper: Essential for seasoning and enhancing all the flavors in the risotto. Always adjust to your personal preference throughout the cooking process.

How to Make This Creamy Brown Rice Risotto: Step-by-Step

Creating this delicious and easy brown rice risotto with mushrooms is surprisingly straightforward. Follow these simple steps for a truly delightful meal:

  • 1) Prepare the Brown Rice: Begin by cooking your brown rice according to the package directions. If you’re cooking brown rice from bulk, a general rule is to boil two cups of water (or vegetable broth for extra flavor) per one cup of rice, then cover and simmer gently for about forty minutes, or until all the liquid is absorbed and the rice is tender. For more detailed methods and perfect rice every time, consult our comprehensive guide on cooking brown rice here.
  • 2) Warm the Vegetable Broth: In a small saucepan, gently heat the vegetable broth over medium heat. Keep it warm throughout the cooking process. This crucial step ensures that when you add the broth to the rice, it doesn’t cool down the pan and interrupt the cooking, helping the rice absorb the liquid more efficiently and maintain a consistent temperature.

  • 3) Craft the Creamy Bean Puree: In a food processor, combine the drained and rinsed white beans, one tablespoon of olive oil, two tablespoons of the warmed vegetable stock, two tablespoons of nutritional yeast, and a pinch of salt. Process until the mixture is completely smooth and creamy, resembling a thick hummus. This is your “secret ingredient” for dairy-free creaminess. Set this flavorful puree aside.

  • 4) Sauté the Mushrooms: In a large saucepan or deep skillet, heat the remaining one tablespoon of olive oil over medium heat. Add the sliced mushrooms, along with a pinch of salt and pepper. Cook, stirring occasionally, until the mushrooms release their moisture and are lightly browned and tender, which typically takes about 3 to 4 minutes. This process brings out their rich umami flavor.

  • 5) Combine Rice and Broth: Once the mushrooms are beautifully cooked, reduce the heat to low. Add the pre-cooked brown rice to the saucepan with the mushrooms. Pour in the warmed vegetable stock. Stir everything gently to combine and allow it to simmer for 4 to 5 minutes. This step allows the brown rice to absorb the flavorful broth and begin to integrate with the mushrooms.

  • 6) Incorporate the Bean Puree and Season: Gently stir the prepared white bean puree into the pan with the rice and mushrooms. Mix thoroughly until everything is well combined and the rice is coated in the creamy sauce. Add the garlic powder, and adjust salt and pepper to taste. Continue to stir and allow the flavors to meld.

  • 7) Serve and Enjoy: Continue to simmer the vegan brown rice risotto for a few more minutes until it reaches your desired thickness and creaminess. Remove from heat, garnish with fresh minced parsley if desired, and serve immediately while warm.

NOTE: The amount of bean puree needed may vary based on your preference for creaminess. Start with a good portion and add more gradually until the risotto reaches your desired consistency. You may not need to use the entire amount.

Expert Tips for the Perfect Easy Brown Rice Risotto

Achieve an effortlessly delicious creamy brown rice risotto every time with these valuable tips and tricks:

  • Maximize Efficiency with Pre-Cooked Brown Rice: To significantly cut down on active cooking time on a busy evening, cook your brown rice a day or two in advance and store it in an airtight container in the refrigerator. When it’s time to make the risotto, the pre-cooked rice will heat up quickly in the warm broth. You might just need to allow a few extra minutes for it to come to temperature and fully integrate with the sauce. This simple step turns an easy recipe into an ultra-fast one!
  • Always Warm Your Vegetable Stock: While it might seem like a minor extra step, warming the vegetable broth before adding it to your risotto is essential. Cold liquid can shock the rice, slowing down the cooking process and potentially leading to unevenly cooked grains or a mushy texture. Warm stock ensures the dish stays at a consistent temperature, allowing the rice to absorb the liquid gradually and evenly, contributing to that perfect creamy consistency.
  • Incorporate More Vegetables with Ease: This recipe is incredibly versatile for adding more of your favorite vegetables. If you wish to include heartier vegetables like diced carrots, celery, bell peppers, or additional mushrooms, add them to the pan along with the initial mushrooms and sauté until tender-crisp before introducing the rice. For quick-cooking vegetables like thawed frozen peas, chopped fresh spinach, or asparagus, stir them in during the last 5 minutes of simmering to ensure they remain vibrant and slightly firm.
  • Storing and Reheating Leftovers: Leftover brown rice risotto makes for a fantastic next-day meal. Store any unused portions in an airtight container in the refrigerator for up to five days. To reheat, transfer the risotto to a skillet over medium-low heat. You’ll likely notice it has thickened considerably. To restore its creamy texture, add a splash of extra vegetable broth or water, stirring gently until it’s warmed through and reaches your desired consistency. Avoid high heat to prevent sticking.
  • Perfect Pairings and Serving Suggestions: Wondering what to serve alongside your rich mushroom brown rice risotto? It pairs beautifully with a variety of side dishes. We love it with vibrant lemon asparagus with caramelized shallots for a touch of brightness, or alongside savory proteins like our savory tofu. For a lighter accompaniment, a crisp green salad, such as a refreshing kale salad, provides a lovely contrast. A sprinkle of fresh parsley or a dash of vegan Parmesan adds a final flourish.

Frequently Asked Questions About Brown Rice Risotto

Can I add more vegetables to my brown rice risotto?

Absolutely! While the earthy flavors of mushrooms perfectly complement the nutty notes of brown rice, this recipe is incredibly adaptable. You can easily swap out the mushrooms for other vegetables or add more to create a heartier dish. Consider quick-cooking options like thawed frozen peas, finely chopped fresh (or frozen) spinach, tender green beans, or vibrant asparagus tips. For firmer vegetables like diced carrots or zucchini, sauté them with the mushrooms at the beginning of the cooking process to ensure they soften properly.

What type of brown rice is best for making this risotto?

You don’t need any specialized or expensive rice for this recipe; simple, everyday brown rice works wonderfully! However, if you have a choice, medium-grain brown rice tends to yield a slightly creamier texture compared to long-grain varieties like brown basmati rice. The beauty of our “secret ingredient”—the white bean puree—is that it provides an abundance of creamy goodness, so you can confidently use either medium-grain or long-grain brown rice and still achieve a lusciously smooth risotto.

Does this brown rice risotto require constant stirring like traditional risotto?

No, and that’s one of the best parts about this recipe! Unlike traditional Arborio risotto, which famously demands continuous stirring and gradual liquid additions, our easy brown rice risotto is designed to be much more hands-off. Once the rice is simmering with the broth, you can let it cook without constant attention, making it the perfect stress-free meal for busy weeknights when you want comfort food without the culinary commitment.

Is this brown rice risotto recipe gluten-free and vegan?

Yes, absolutely! This recipe is inherently both gluten-free and vegan, making it suitable for a wide range of dietary needs and preferences. Brown rice is naturally gluten-free, and all ingredients used—vegetable broth, mushrooms, olive oil, white beans, and nutritional yeast—are plant-based. It’s a fantastic option for anyone looking for a delicious and inclusive meal.

This easy brown rice risotto with mushrooms turns the traditional risotto upside down! Using a “secret” ingredient to give regular brown rice a look and feel much like cooked arborio rice. I’m here to show you how to make risotto with brown rice for a simple weeknight meal.

Equipment

  • Measuring Cups
  • Measuring spoons
  • My favorite knives
  • Food Processor

Ingredients for 6 servings

  • 1 cup uncooked brown rice
  • 1 cup + 2 Tablespoons vegetable broth
  • 8 ounces sliced mushrooms
  • 2 to 3 Tablespoons olive oil
  • Salt and pepper to taste
  • 15 ounces Great Northern or white beans drained and rinsed
  • 2 Tablespoons nutritional yeast
  • 1 teaspoon garlic powder
  • Minced parsley for garnish (optional)

Instructions

  • Cook brown rice according to the package instructions. If using brown rice in bulk, boil 2 cups of water per 1 cup of rice, then let simmer with the lid on for 40 minutes.
  • Heat vegetable broth over medium heat in a small saucepan. Keep warm.
  • At the same time, combine beans, 1 Tablespoon of olive oil, 2 tablespoons of warm veggie stock, 2 Tablespoons of nutritional yeast, and salt in a food processor until smooth (like hummus). Set aside.
  • In a large saucepan, heat mushrooms with 1 tablespoon of olive oil, salt, and pepper until lightly browned, about 3 to 4 minutes.
  • Once mushrooms are cooked, reduce heat and add cooked brown rice. Then add the warmed vegetable stock and let simmer for 4 to 5 minutes. Once time is up, add the bean puree to the pan and thoroughly combine. (Note: you may not need to use the entire amount of puree, it is up to your discretion.) Add garlic powder, and salt and pepper to taste.
  • Once risotto is thickened to your liking, remove from heat, top with parsley if using, and serve immediately.

Notes

  • Save some time. Make the brown rice the day before and refrigerate. It will heat up quickly in the warm broth but you may need to allow a few extra minutes to heat.
  • Warm the vegetable stock. It may seem like an extra step but using warm stock heats up the entire dish more quickly and keeps the rice from overcooking and turning to mush.
  • If adding other vegetables. Add them in with the mushrooms to cook before adding the rice.
